Determination of the water dispersion in butter; indicator paper method

Summary

This standard specifies a method for the determination of the moisture dispersion in butter. Put a suitable indicator paper on a prepared intersecting plane of the butter sample. The water of the butter penetrates into the indicator paper. The resulting coloured marks which are compared with a standard comparison table give information about the moisture dispersion with reference to the number and the size of the droplets.
