Determination of pH value and acidity of starch and starch products

Summary

This standard specifies a method for the determination of pH and acidity of native and modified starches. For the determination of pH the potential difference between a glass electrode and a reference electrode, which are immersed in an aqueous of the sample, is measured. For the determination of acidity an aqueous solution of the sample is titrated with sodium hydroxide solution to pH 8,30.
